Blood and vinegar

Are there any biochemists around who know how blood reacts when mixed with acetic acid? I'm making up a potion recipe with goodies like root of black hellebore, grated Murtlap tumours, vinegar of rue with dissolved powdered pearl and the blood of a freshly killed blue salamander, and I'd like it if it didn't curdle or clot on me.
