Care home questions

Setting: residential home for elderly people, USA, modern day.

Would any meals be served in people's rooms, or would they go to a dining room? (Apart from arthritis, the person living there has no major health difficulty.)

The woman has very bad arthritis and finds it difficult to use her hands. Would she receive assistance to eat? If so: I want her daughter to be doing this, but if she weren't there, what staff member would likely provide help?

In general, how much care could the daughter provide to her mother? She visits for a few hours a day.
