Blindness - modern and hsitorical attitudes.

OK this is really two different queries for two different fics but they're related so I'm putting them in one post.

Firstly, the modern day fic. My character is blinded in his mid 30s and after convincing himself he could never do anything for himself again, his friends basically kick his ass into trying and all of them research all kinds of useful things. So what I'm looking for is techniques, gadgets, anything to help him get his life back. I've been skimming the archive and found a post on thsi already so I have got some help. I tried google and got vast amounts of information, most of which was totally useless or irrelevent. I have some stuff figured out like organising clothing, not moving things, there's a gadget where you can stick a barcode on things and record a message on the reader saying what the item is (good for organising cd collections and such). I could do with other ideas and especially cooking. My character is going to relearn to cook and some of it I can figure out and some of the previous post helped, but I could do with someone explaining how you tell when stuff is cooked etc (I cook but I use visual clues mainly).

Also on the same subject his blindness was caused by exposure to light - would his eyes look normal, anyone know, I couldn't find much information at all on that. My guess is yes, but it's a guess.

Still same fic - American Guide Dogs - how do you go about getting one, what's the training like? Are they normally labs/shepherds (the two main breeds of guide dog where I am)

And then my second query - I have a fic set in Roman Britain (around the time of Boadicca, although not the same area of Bitain) with a child, blind from birth. How would Romans view/treat a blind person? What about the Britains would they treat him better/worse? I couldn't find *anything* about blindness in Roman times so any information no matter how insignificant would help
